Icon changes can tend to drive a lot of new engagement ("What's this new icon on my homescreen?"), so it's usually best to approach these tests as you would a soft launch: choose a geo that's representative of your core market but that isn't so substantial that you'll imperil your revenues if the icon is sub-optimal. Usually Australia, NZ, Canada are good choices if your core market is the US.
